Ingredients

  • 2 cups rotini pasta (or penne, farfalle)
  • 2 cups cooked grilled chicken, shredded or chopped
  • 2 cups chopped romaine lettuce
  • ½ cup grated or shaved Parmesan cheese
  • 1 cup croutons
  • ⅔ cup Caesar dressing (homemade or store-bought)
  • Optional add-ins: chopped bacon, cherry tomatoes, avocado, red onion
  • Homemade Caesar Dressing (optional):
  • 1 egg yolk
  • 1 clove garlic, minced
  • 1 anchovy fillet or 1 tsp anchovy paste
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • ½ cup olive oil
  • 2 tbsp grated Parmesan
  • Salt & pepper to taste


Instructions

  1. Cook the pasta: Boil pasta according to package instructions. Drain and let cool.
  2. Prepare the chicken: Grill, shred, or cube the chicken as preferred.
  3. Mix the base: In a large bowl, combine the pasta, chicken, chopped romaine, and Parmesan.
  4. Add dressing: Pour in Caesar dressing and toss well to evenly coat everything.
  5. Finish and serve: Just before serving, add croutons to maintain crunch. Garnish with extra Parmesan or black pepper if desired. Serve chilled or at room temperature.

Notes

For a lighter version, use Greek yogurt-based Caesar dressing. Add avocado or bacon for a more indulgent twist. Croutons should be added just before serving to stay crispy.
