Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsweetened cocoa powder
- 1/2 cup sugar
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup chocolate chips
- Whipped cream for topping
- Mini marshmallows for garnish
Instructions
- Preheat your oven to 325°F (163°C).
- Prepare the crust by combining graham cracker crumbs, cocoa powder, sugar, and melted butter in a medium bowl.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a separate bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and heavy cream until just combined.
- Fold in chocolate chips gently using a spatula.
- Pour the cheesecake mixture over the crust and smooth the top.
- Bake for 55-60 minutes or until set but slightly jiggly in the center.
- Let cool and refrigerate for at least 4 hours before serving.
- Top with whipped cream and mini marshmallows before serving.
Notes
For best results, prepare the cheesecake a day in advance and store in the refrigerator. Use room temperature ingredients for a smoother batter.
