Ingredients

  • 8 chicken thighs
  • Zest of 2 lemons
  • 2 lemons (juice of 1 lemon, cut the other lemon into slices)
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper (freshly ground)
  • 1 tsp red chili flakes
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp mustard powder


Instructions

  1. Preheat your oven to 400°F (200°C) or your air fryer to 380°F (193°C).
  2. In a bowl, mix the lemon zest, honey, olive oil, salt, black pepper, red chili flakes, paprika, garlic powder, and mustard powder to create a marinade.
  3. Place the chicken thighs in a large bowl or zip-top bag and pour the marinade over the chicken. Ensure each thigh is well coated. Marinate for at least 30 minutes, or overnight in the fridge for best flavor.
  4. Oven-Baked Method: Arrange the marinated chicken thighs on a baking sheet lined with parchment paper. Squeeze the juice of one lemon over the chicken and place the lemon slices on top. Bake for 35-40 minutes or until the chicken is cooked through and has a nice golden color.
  5. Air Fryer Method: Place the marinated chicken thighs in the air fryer basket in a single layer. Air fry for about 25-30 minutes, flipping halfway through, until they are fully cooked and crispy on the outside.

Notes

Let the chicken marinate overnight for better flavor. Adjust chili flakes for heat preference. You can use chicken breasts or drumsticks instead of thighs.
