Description

A sweet and slightly cheesy casserole that is perfect for potlucks and holiday dinners.


Ingredients

  • 2 cups corn kernels (fresh or frozen)
  • 1 cup sour cream
  • 1/2 cup honey
  • 1/2 cup milk
  • 1/4 cup butter (melted)
  • 1 cup shredded cheddar cheese
  • 1 cup cornmeal
  • 2 large eggs
  • 1 teaspoon baking powder
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the corn kernels, sour cream, honey, milk, and melted butter.
  3. In another bowl, whisk together the cornmeal, eggs, baking powder, salt, and pepper.
  4. Gradually add the dry ingredients to the wet mixture and stir until well combined.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 40-45 minutes, or until set and golden brown on top.
