Ingredients

  • 1 lb lean ground beef
  • 3 cups broccoli florets
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • ⅓ cup low sodium soy sauce
  • ¼ cup honey
  • 1 tbsp rice vinegar
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • ½ tsp red pepper flakes (optional)
  • 2 cups cooked rice or noodles (optional)
  • 1 tbsp sesame seeds (optional)
  • 2 green onions, sliced (optional)


Instructions

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, and red pepper flakes. Mix cornstarch with water to form a slurry and set aside.
  2. Heat olive oil in a pan. Sauté the onion for 2 minutes, then add the ground beef. Cook until browned, breaking it apart with a spatula. Stir in the garlic and cook for 30 seconds.
  3. Stir in the broccoli and add ¼ cup water. Cover and steam for 3-4 minutes until tender but crisp.
  4. Stir in the honey garlic sauce and let it simmer for 2 minutes. Add the cornstarch slurry and stir until the sauce thickens.
  5. Remove from heat and serve over rice or noodles, garnished with sesame seeds and green onions.

Notes

Use fresh broccoli for optimal crunch and flavor. Adjust honey based on sweetness preference. For more spice, add extra red pepper flakes or chopped chili peppers.
