Description

A delicious side dish featuring sweet potatoes roasted to perfection and caramelized with honey and butter, adding a touch of sweetness to any meal.


Ingredients

  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 tablespoons fresh thyme leaves
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. Drizzle the sweet potato cubes with olive oil and season with salt and pepper. Rub to coat evenly, then place on the baking sheet.
  3. Roast the sweet potatoes in the preheated oven for 40-45 minutes until tender and caramelized around the edges.
  4. In a skillet, combine the melted butter and honey over medium heat until mixed.
  5. Add the roasted sweet potatoes to the skillet and caramelize for an additional 3 minutes, flipping to coat evenly.
  6. Transfer to a serving tray and garnish with fresh thyme and a sprinkle of Maldon salt.

Notes

Choose firm, unblemished sweet potatoes for best results. You can also experiment with other herbs like rosemary or sage.
