Ingredients
- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons unsalted butter, melted
- 2 tablespoons honey
- 2 tablespoons fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
- Drizzle the sweet potato cubes with olive oil and season with salt and pepper. Rub to coat evenly, then place on the baking sheet.
- Roast the sweet potatoes in the preheated oven for 40-45 minutes until tender and caramelized around the edges.
- In a skillet, combine the melted butter and honey over medium heat until mixed.
- Add the roasted sweet potatoes to the skillet and caramelize for an additional 3 minutes, flipping to coat evenly.
- Transfer to a serving tray and garnish with fresh thyme and a sprinkle of Maldon salt.
Notes
Choose firm, unblemished sweet potatoes for best results. You can also experiment with other herbs like rosemary or sage.
