- 1 lb boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
- 2 cups cooked rice (white, brown, or jasmine)
- ¼ cup honey
- ⅓ cup BBQ sauce
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tbsp oil (vegetable or olive)
- Salt and pepper, to taste
- Optional: green onions or sesame seeds for garnish
Instructions
- Prep the Chicken: Season chicken pieces with salt and pepper. Heat oil in a skillet over medium-high heat. Cook chicken for 5–7 minutes until golden brown and fully cooked. Remove and set aside.
- Make the Honey BBQ Glaze: In the same skillet, sauté minced garlic for 30 seconds. Add honey, BBQ sauce, and soy sauce. Simmer for 2–3 minutes until slightly thickened.
- Combine: Return cooked chicken to the skillet and coat well in the glaze. Let it simmer for another 2–3 minutes to absorb flavor.
- Serve: Spoon cooked rice into bowls. Top with sticky BBQ chicken. Garnish with green onions or sesame seeds if desired.
Notes
Use your favorite BBQ sauce (spicy, smoky, or sweet) to adjust the flavor. Great for meal prep or served in lettuce wraps for a low-carb version.
