  • 2 pounds medium to large carrots
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the carrots, then trim and cut into 1-inch pieces.
  3. In a bowl, whisk together balsamic vinegar, honey, olive oil, garlic, thyme, salt, and pepper.
  4. Toss the carrot pieces in the glaze until evenly coated.
