  • 3 cloves garlic, minced

  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, sliced carrots, and diced celery. Stir occasionally for about 5 minutes, until the onions become translucent and the vegetables soften slightly.
  2. Throw in the minced garlic, dried thyme, and dried parsley. Sauté for another 2 minutes until fragrant.
  3. Gradually pour in the chicken broth, ensuring none of the flavorful bits from the bottom of the pot remain. Bring the mixture to a gentle boil.
  4. Once boiling, reduce the heat and add in the shredded cooked chicken. Simmer for about 10 minutes to blend the flavors.
  5. Introduce the egg noodles into the pot. They typically take about 6-8 minutes to cook, so keep an eye on them. Stir occasionally to prevent sticking.
  6. After the noodles are cooked, taste the soup. Add salt and pepper as needed, adjusting to your preference.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For added texture and variety, consider replacing chicken with chickpeas or tofu. Use rotisserie chicken for convenience.
