Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks of celery, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, sliced carrots, and diced celery. Stir occasionally for about 5 minutes, until the onions become translucent and the vegetables soften slightly.
- Throw in the minced garlic, dried thyme, and dried parsley. Sauté for another 2 minutes until fragrant.
- Gradually pour in the chicken broth, ensuring none of the flavorful bits from the bottom of the pot remain. Bring the mixture to a gentle boil.
- Once boiling, reduce the heat and add in the shredded cooked chicken. Simmer for about 10 minutes to blend the flavors.
- Introduce the egg noodles into the pot. They typically take about 6-8 minutes to cook, so keep an eye on them. Stir occasionally to prevent sticking.
- After the noodles are cooked, taste the soup. Add salt and pepper as needed, adjusting to your preference.
- Serve hot, garnished with fresh parsley if desired.
Notes
For added texture and variety, consider replacing chicken with chickpeas or tofu. Use rotisserie chicken for convenience.
