Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks of celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, sliced carrots, and diced celery. Stir occasionally for about 5 minutes, until the onions become translucent and the vegetables soften slightly.
  2. Throw in the minced garlic, dried thyme, and dried parsley. Sauté for another 2 minutes until fragrant.
  3. Gradually pour in the chicken broth, ensuring none of the flavorful bits from the bottom of the pot remain. Bring the mixture to a gentle boil.
  4. Once boiling, reduce the heat and add in the shredded cooked chicken. Simmer for about 10 minutes to blend the flavors.
  5. Introduce the egg noodles into the pot and cook for about 6-8 minutes, stirring occasionally to prevent sticking.
  6. Taste the soup and add salt and pepper as needed, adjusting to preference.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For a richer flavor, consider simmering your broth with bones and vegetables beforehand.
