Ingredients
- Fresh tomatoes
- Onion
- Garlic
- Basil leaves
- Vegetable broth

Instructions
- Preheat your oven to 400°F (200°C).
- Cut the tomatoes in half and place them cut-side up on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 25-30 minutes.
- Heat olive oil in a pot over medium heat, then sauté chopped onions and minced garlic until tender.
- Add the roasted tomatoes, vegetable broth, and basil to the pot, and combine.
- Bring the mixture to a gentle simmer and cook for 10 minutes.
- Using an immersion blender, puree the soup until smooth. Stir in heavy cream and adjust seasoning.
- Ladle the soup into bowls, garnish with fresh basil, and serve.
