Ingredients

  • Fresh tomatoes
  • Onion
  • Garlic
  • Basil leaves
  • Vegetable broth
  • Olive oil
  • Heavy cream
  • Salt
  • Pepper


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them cut-side up on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 25-30 minutes.
  3. Heat olive oil in a pot over medium heat, then sauté chopped onions and minced garlic until tender.
  4. Add the roasted tomatoes, vegetable broth, and basil to the pot, and combine.
  5. Bring the mixture to a gentle simmer and cook for 10 minutes.
  6. Using an immersion blender, puree the soup until smooth. Stir in heavy cream and adjust seasoning.
  7. Ladle the soup into bowls, garnish with fresh basil, and serve.
