A smooth and tangy balsamic vinaigrette enriched with Greek yogurt for a creamy texture — perfect for salads, roasted vegetables, or as a marinade.
Ingredients
1/3 cup balsamic vinegar 1/2 cup extra virgin olive oil 1/4 cup plain Greek yogurt 1 tbsp Dijon mustard 1 tbsp honey (or alternative sweetener) 1 clove garlic, minced Salt & pepper to taste
Instructions
1. In a medium bowl, whisk together balsamic vinegar, Greek yogurt, Dijon mustard, honey, and garlic. 2. Slowly drizzle in olive oil while whisking constantly to emulsify. 3. Season with salt and pepper. 4. Taste and adjust — add more sweetener if too tangy, or more vinegar if too mild. 5. Transfer to a glass jar with a tight lid.
Notes
Keeps in the refrigerator for up to 5 days. Shake or stir well before each use.
