Ingredients
- 20 ounces skinless boneless chicken breast, cut into ¼ inch slices
- 3 tablespoons water
- 1 tablespoon Shaoxing cooking wine
- ½ teaspoon Kosher salt
- ¼ teaspoon baking soda
- 2 tablespoons cornstarch
- 1 tablespoon neutral oil
- ⅔ cup soy sauce (light sodium)
- ⅔ cup water
- 4 tablespoons granulated sugar
- 2½ tablespoons cornstarch
- 1½ teaspoons toasted sesame oil
- 1 pound broccoli, cut into florets
- 1½ tablespoons garlic, minced
- 1½ tablespoons ginger, minced
Instructions
- In a bowl, mix the chicken slices with 3 tablespoons of water, Shaoxing cooking wine, Kosher salt, baking soda, and 2 tablespoons of cornstarch. Let it marinate for at least 30 minutes.
- In another bowl, combine ⅔ cup soy sauce, ⅔ cup water, 4 tablespoons granulated sugar, 2½ tablespoons cornstarch, and toasted sesame oil. Mix well until everything is combined.
- In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until cooked through.
- Add the minced garlic and ginger to the pan and cook for another minute.
- Add the broccoli florets and cook until bright green and tender, about 3-4 minutes.
- Pour in the prepared sauce and stir until it thickens and coats the chicken and broccoli.
Notes
For added flavor, garnish with sesame seeds or sliced green onions. Best enjoyed fresh but can be stored in an airtight container for up to 3 days.
