For the Scones:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ¼ cup granulated sugar
- 1 tablespoon chai spice blend (cinnamon, cardamom, ginger, nutmeg, cloves, black pepper)
- ½ teaspoon kosher salt
- 12 tablespoons (1½ sticks) very cold unsalted butter, diced
- ½ cup very cold heavy cream
- 2 large eggs (1 whole + 1 yolk for dough, 1 egg white reserved for egg wash)
For the Maple Chai Glaze:
- 1 heaping cup powdered sugar
- 2 teaspoons chai spice blend
- 1 teaspoon vanilla extract
- 3 tablespoons heavy cream
- 1 tablespoon pure maple syrup
- Pinch of kosher salt
Instructions
- Prep Ingredients: Dice the butter and place it in the freezer for 10 minutes. Whisk together the heavy cream, 1 whole egg, and 1 yolk. Refrigerate the mixture.
- Make the Dough: In a food processor, pulse the flour, sugar, baking powder, salt, and chai spices. Add the cold, diced butter and pulse until crumbly. Slowly pour in the cream-egg mixture while pulsing, just until the dough comes together.
- Shape and Chill: Turn the dough out onto a floured surface. Gently shape into a 1-inch thick disc. Slice into 8 wedges or smaller triangles. Wrap in plastic and chill for 30 minutes.
- Bake: Preheat oven to 375°F (190°C). Place scones on a parchment-lined baking sheet. Brush the tops with the reserved egg white. Bake for 20–22 minutes, or until golden brown and baked through.
- Make the Glaze: While the scones cool, whisk together powdered sugar, chai spice, vanilla, heavy cream, maple syrup, and salt until smooth and thick.
- Glaze and Serve: Dip each cooled scone into the glaze. Let set, then dip a second time for a thicker coating. Enjoy with coffee or chai tea.
Notes
For best results, keep your ingredients very cold. You can freeze unbaked scones and bake from frozen—just add a few minutes to the baking time. Customize the spice blend to your taste.
