A hearty and nourishing soup that captures the beloved flavors of stuffed peppers with ground turkey or beef, vibrant bell peppers, and savory broth.
Ingredients
- 4 large bell peppers, diced
- 1 pound ground turkey or beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef or vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup cooked brown rice or quinoa (optional)
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until tender and fragrant (3 to 5 minutes).
- Add ground turkey or beef, breaking it up and cooking until browned.
- Stir in diced bell peppers and cook briefly. Add diced tomatoes with juice, broth, Italian seasoning, salt, and pepper.
- If using, stir in cooked brown rice or quinoa.
- Bring to a boil and then reduce heat to let simmer for about 30 minutes (or cook in a crockpot on low for 6 to 8 hours, or high pressure in an Instant Pot for 10 minutes).
- Before serving, garnish with fresh parsley.
Notes
For storage, refrigerate for 3-4 days or freeze for up to 2 months. Reheat on the stovetop or microwave, adding a splash of broth if needed.
