Ingredients
- 1 pound lean ground turkey or chicken
- 1 packet taco seasoning
- 8 ounces cream cheese
- 4 cups chicken broth
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 small onion, diced
- 1 cup diced tomatoes
- Salt and pepper to taste
- Optional toppings: shredded cheese, cilantro, sour cream, avocado
Instructions
- In a large pot over medium heat, cook the lean ground turkey or chicken until browned.
- Add the diced onion and cook until softened and translucent, about 3-4 minutes.
- Stir in the taco seasoning and let it cook for about a minute.
- Add the chicken broth, black beans, corn, and diced tomatoes. Increase heat to bring to a simmer.
- Lower the heat and add the cream cheese, stirring until it melts and blends smoothly.
- Season with salt and pepper to taste.
- Ladle soup into bowls and serve hot with optional toppings.
