Description

Ingredients

  • 1 pound lean ground turkey or chicken
  • 1 packet taco seasoning
  • 8 ounces cream cheese
  • 4 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 small onion, diced
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, cilantro, sour cream, avocado


Instructions

  1. In a large pot over medium heat, cook the lean ground turkey or chicken until browned.
  2. Add the diced onion and cook until softened and translucent, about 3-4 minutes.
  3. Stir in the taco seasoning and let it cook for about a minute.
  4. Add the chicken broth, black beans, corn, and diced tomatoes. Increase heat to bring to a simmer.
  5. Lower the heat and add the cream cheese, stirring until it melts and blends smoothly.
  6. Season with salt and pepper to taste.
  7. Ladle soup into bowls and serve hot with optional toppings.
