A delightful and easy side dish that features crisp baby potatoes roasted with herbs and garlic.
Ingredients
- 2 pounds of baby potatoes
- 3 tablespoons olive oil
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 4 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine the olive oil, rosemary, thyme, minced garlic, salt, and pepper.
- Add the halved potatoes and toss to coat them evenly.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for about 25-30 minutes, or until they are crispy and golden brown, turning halfway through.
- Serve hot as a side dish.
Notes
For added flavor, you can use fresh herbs instead of dried or sprinkle with cheese before serving.
