A super simple and delicious side dish, these Herb Roasted Potatoes are fluffy on the inside, crispy on the outside, and packed with flavor.
Ingredients
- 2 pounds potatoes, diced
- 2 tablespoons olive oil
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine diced potatoes, olive oil, rosemary, thyme, garlic powder, salt, and pepper.
- Toss until potatoes are well coated.
- Spread potatoes in a single layer on a baking sheet.
- Roast for 30-35 minutes, turning halfway, until golden brown.
- Remove from oven and serve hot.
Notes
For added flavor, consider freshly chopping herbs or adding grated parmesan before serving.
