Description

A super simple and delicious side dish, these Herb Roasted Potatoes are fluffy on the inside, crispy on the outside, and packed with flavor.


Ingredients

  • 2 pounds potatoes, diced
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine diced potatoes, olive oil, rosemary, thyme, garlic powder, salt, and pepper.
  3. Toss until potatoes are well coated.
  4. Spread potatoes in a single layer on a baking sheet.
  5. Roast for 30-35 minutes, turning halfway, until golden brown.
  6. Remove from oven and serve hot.

Notes

For added flavor, consider freshly chopping herbs or adding grated parmesan before serving.
