Healthy, flavorful turkey meatballs paired with vibrant veggies for a light yet hearty meal.
Ingredients
- 1 lb ground turkey
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 1 tablespoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup mixed vegetables (zucchini, bell peppers, carrots)
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, parsley, basil, lemon zest, salt, and pepper. Mix until well combined.
- Roll the mixture into meatballs, about 1 to 1.5 inches in diameter.
- Line a baking sheet with parchment paper and place the meatballs on it.
- In a separate bowl, toss the mixed vegetables with olive oil, salt, and pepper. Spread the veggies around the meatballs on the baking sheet.
- Bake in the preheated oven for 20-25 minutes, until the meatballs are golden and cooked through.
Notes
For a vegan version, swap turkey for plant-based ground meat and use flaxseed meal mixed with water instead of an egg.
