- 1 pound boneless, skinless chicken thighs, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups cauliflower florets
- 1 cup chopped celery
- 4 cups chicken broth (low sodium)
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced chicken thighs and sear until browned on all sides, about 5 minutes.
- Introduce the chopped onion and minced garlic, sautéing for 2-3 minutes until translucent.
- Stir in the cauliflower florets and chopped celery, cooking for another 3-4 minutes.
- Pour in the chicken broth and sprinkle in the dried thyme, bringing to a gentle boil before simmering for 15-20 minutes until vegetables are tender.
