  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cauliflower florets
  • 1 cup chopped celery
  • 4 cups chicken broth (low sodium)
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken thighs and sear until browned on all sides, about 5 minutes.
  3. Introduce the chopped onion and minced garlic, sautéing for 2-3 minutes until translucent.
  4. Stir in the cauliflower florets and chopped celery, cooking for another 3-4 minutes.
  5. Pour in the chicken broth and sprinkle in the dried thyme, bringing to a gentle boil before simmering for 15-20 minutes until vegetables are tender.
  6. Stir in the heavy cream and season with salt and pepper; simmer for an additional 5 minutes.
