A hearty and easy-to-make breakfast casserole perfect for busy mornings or family gatherings.
Ingredients
- 2 pounds pork sausage
- 12 eggs
- 1 cup sour cream
- 1/4 cup milk
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 4 green onions, chopped
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 2 cups shredded cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C). Spray a 9×13” pan with cooking spray.
- In a large bowl, combine the eggs, sour cream, milk, cheese, salt, and pepper. Mix on low speed with an electric mixer until just combined.
- In a skillet over medium heat, cook the sausage until browned, breaking into pieces. Drain excess grease and add to the egg mixture.
- Add the diced bell peppers and onions to the skillet and sauté for 2-3 minutes, then stir into the egg mixture.
- Pour the mixture into the greased pan. Bake for 35-50 minutes until edges are set and center is slightly jiggly.
Notes
Leftovers can be stored in the fridge for 3-4 days. Reheat in the microwave for a quick meal.
