Description

A hearty and easy-to-make breakfast casserole perfect for busy mornings or family gatherings.


Ingredients

  • 2 pounds pork sausage
  • 12 eggs
  • 1 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 green onions, chopped
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 2 cups shredded cheddar cheese


Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9×13” pan with cooking spray.
  2. In a large bowl, combine the eggs, sour cream, milk, cheese, salt, and pepper. Mix on low speed with an electric mixer until just combined.
  3. In a skillet over medium heat, cook the sausage until browned, breaking into pieces. Drain excess grease and add to the egg mixture.
  4. Add the diced bell peppers and onions to the skillet and sauté for 2-3 minutes, then stir into the egg mixture.
  5. Pour the mixture into the greased pan. Bake for 35-50 minutes until edges are set and center is slightly jiggly.

Notes

Leftovers can be stored in the fridge for 3-4 days. Reheat in the microwave for a quick meal.
