Description

These healthy zucchini tots are crispy on the outside, tender on the inside, and packed with cheesy flavor. Great as a low-carb snack, appetizer, or lunchbox treat. Kid-approved and easy to make in the oven or air fryer!


Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis, squeezed dry)
  • 1 large egg (or flax egg)
  • ½ cup shredded cheddar cheese
  • ½ cup panko breadcrumbs (or almond/oat flour for gluten-free)
  • 1 tsp Italian seasoning
  • ¼ tsp onion powder
  • Salt and pepper to taste
  • Optional dips: ketchup, ranch, tzatziki


Instructions

  1. Preheat oven: to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prep zucchini: Grate the zucchini and place it in a clean towel. Squeeze out as much moisture as possible.
  3. Mix ingredients: In a bowl, combine the zucchini, egg, cheese, breadcrumbs, Italian seasoning, onion powder, salt, and pepper.
  4. Shape tots: Form into small tot shapes, about 1 tablespoon each, and place on the baking sheet.
  5. Bake: Bake for 25–30 minutes, flipping halfway through, until golden brown and crisp.
  6. Air fryer option: Cook at 380°F (193°C) for 15–18 minutes, flipping halfway.

Notes

  • For extra crispiness, spray tots lightly with olive oil before baking.
  • Make it dairy-free: use dairy-free cheese or skip cheese and add nutritional yeast.
  • Store leftovers in the fridge for up to 3 days. Reheat in the oven or air fryer to maintain crispiness.
