Description

A comforting and easy-to-prepare white chicken chili packed with protein and fiber, perfect for cold nights.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup Greek yogurt
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. Sauté the onion and garlic in a large pot until they’re nice and soft.
  2. Add the cooked chicken, white beans, corn, chicken broth, cumin, and chili powder. Stir it well.
  3. Simmer for 20 minutes.
  4. Stir in the Greek yogurt until smooth and well-combined.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!

Notes

Feel free to add diced jalapeños for extra spice or substitute chicken with turkey or mushrooms for a vegetarian version.
