Description
A comforting and easy-to-prepare white chicken chili packed with protein and fiber, perfect for cold nights.
Ingredients
- 1 lb chicken breast, cooked and shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup Greek yogurt
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Sauté the onion and garlic in a large pot until they’re nice and soft.
- Add the cooked chicken, white beans, corn, chicken broth, cumin, and chili powder. Stir it well.
- Simmer for 20 minutes.
- Stir in the Greek yogurt until smooth and well-combined.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
Feel free to add diced jalapeños for extra spice or substitute chicken with turkey or mushrooms for a vegetarian version.
