Instructions
- Peel the sweet potatoes and grate them using a box grater or food processor.
- Place the grated sweet potatoes in a clean kitchen towel and squeeze out excess moisture.
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and sauté until translucent.
- Add the grated sweet potatoes to the skillet and spread them out evenly.
- Cook for about 5-7 minutes, or until the bottom is crispy and golden brown.
- Flip the hash browns in sections and cook for an additional 5-7 minutes until both sides are crispy.
- Season with salt, pepper, and any other seasonings you prefer.
