Description
A delicious one-pan meal combining lean ground turkey and nutritious sweet potatoes with veggies, packed with protein and fiber.
Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper, to taste
- Olive oil, for cooking
- Fresh parsley, for garnish (optional)
Instructions
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Add the chopped onion and cook until soft, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the ground turkey to the skillet. Cook until browned, breaking it apart as it cooks.
- Add the diced sweet potatoes, bell pepper, paprika, cumin, salt, and pepper.
- Cover the skillet and cook on medium heat for about 15-20 minutes, or until the sweet potatoes are tender, stirring occasionally.
- Once cooked, remove from heat and garnish with fresh parsley if using.
