Ingredients

  • 1 cup cottage cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cucumber, diced
  • 1/4 cup bell pepper, diced
  • 1/4 avocado, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. In a bowl, combine the cottage cheese with cherry tomatoes, cucumber, and bell pepper. Mix it up.
  2. Pour on the olive oil and lemon juice.
  3. Add salt and pepper to taste.
  4. Arrange the slices of avocado on top.
  5. Gently toss everything together.
