Ingredients
- 1 cup cottage cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cucumber, diced
- 1/4 cup bell pepper, diced
- 1/4 avocado, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, combine the cottage cheese with cherry tomatoes, cucumber, and bell pepper. Mix it up.
- Pour on the olive oil and lemon juice.
- Add salt and pepper to taste.
- Arrange the slices of avocado on top.
- Gently toss everything together.
- Plate it up and serve immediately.
