Ingredients
- 1 cup almond flour
- 1/4 cup cocoa powder
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- Chocolate chips (optional for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, cocoa powder, and baking soda.
- In another bowl, mix melted coconut oil, honey or maple syrup, vanilla extract, and salt.
- Gradually combine the wet and dry ingredients until a dough forms.
- Grease a muffin tin and press the dough into the bottom and up the sides to form cups.
- Bake for about 10 minutes, then let them cool.
- Optionally, fill them with chocolate chips or your favorite healthy filling.
- Enjoy as a healthy dessert or snack!
Notes
Store any leftover cookie cups in an airtight container at room temperature for up to three days. Refrigerate for up to a week or freeze for up to a month.
