A lighter take on classic chicken pot pie flavors, this Healthy Chicken Pot Pie Soup is hearty, comforting, and packed with nutrients.
Ingredients
- 1 lb chicken breast, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup potatoes, diced
- 1 cup peas
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup coconut milk
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 tsp dried thyme
- 1 tsp dried rosemary
Instructions
- In your Instant Pot or Crockpot, heat olive oil and sauté onions until they become translucent.
- Add chicken, carrots, celery, and potatoes; cook for a few minutes.
- Pour in chicken broth and stir well.
- Add coconut milk, garlic powder, onion powder, thyme, rosemary, salt, and pepper. Mix everything together.
- If you’re using the Instant Pot, seal the lid and cook on high pressure for 10 minutes. If using a Crockpot, cook on low for 6-8 hours.
- Stir in peas just before serving, and enjoy your healthy chicken pot pie soup!
Notes
For extra creaminess, you can add more coconut milk. Feel free to change up the vegetables based on what you have or prefer. If you want a thicker soup, you can mash some of the potatoes before serving.
