Description

A creamy and healthy chicken Alfredo made with cauliflower sauce, perfect for a guilt-free pasta night.


Ingredients

  • 1 lb chicken breast
  • 2 cups cauliflower florets
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 8 oz fettuccine pasta


Instructions

  1. Cook fettuccine according to package instructions, adding salt to the water.
  2. Steam cauliflower until tender.
  3. Heat olive oil in a skillet and sauté minced garlic until fragrant.
  4. Add chicken breast and cook until golden brown and cooked through.
  5. Blend the cooked cauliflower with chicken broth and Parmesan until smooth.
  6. Combine the cauliflower sauce with the cooked chicken.
  7. Mix in drained fettuccine and stir well.
  8. Season with salt and pepper to taste.
  9. Serve warm, optionally topping with extra Parmesan.

Notes

For a plant-based option, swap chicken for shrimp or tofu, and use nutritional yeast instead of Parmesan for a dairy-free version.
