Description

Delicious and nutritious oatmeal cookies made with wholesome ingredients, perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup mashed banana or unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins or coconut flakes (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the rolled oats, grated carrots, mashed banana (or applesauce), honey (or maple syrup), and vanilla extract until well combined.
  3. Add the ground cinnamon, baking soda, and salt. Mix again until evenly distributed. If using, fold in the nuts and raisins (or coconut flakes).
  4. Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 12-15 minutes or until the edges are golden brown.
  6. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to three days or refrigerate for up to a week. Freeze for up to three months with parchment paper between layers.
