Delicious and nutritious oatmeal cookies made with wholesome ingredients, perfect for breakfast or a snack.
Ingredients
- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup mashed banana or unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts or pecans (optional)
- 1/4 cup raisins or coconut flakes (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the rolled oats, grated carrots, mashed banana (or applesauce), honey (or maple syrup), and vanilla extract until well combined.
- Add the ground cinnamon, baking soda, and salt. Mix again until evenly distributed. If using, fold in the nuts and raisins (or coconut flakes).
- Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are golden brown.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container for up to three days or refrigerate for up to a week. Freeze for up to three months with parchment paper between layers.
