Ingredients
- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup almond flour
- 1/4 cup maple syrup or honey
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup raisins or walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, grated carrots, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix together the maple syrup, vanilla extract, and any optional ingredients like raisins or walnuts.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the edges are golden.
- Let them cool for a few minutes before transferring to a wire rack. Enjoy your healthy cookies!
Notes
Make sure to grate the carrots finely for even cooking. Adjust maple syrup for sweetness as desired.
