Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup raisins or walnuts (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, grated carrots, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix together the maple syrup, vanilla extract, and any optional ingredients like raisins or walnuts.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes, or until the edges are golden.
