Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1/2 cup light cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chopped onion, bell pepper, and garlic; cook until softened.
  3. Stir in the cubed chicken and Cajun seasoning; cook until the chicken is browned.
  4. Add rice and chicken broth, bring to a boil, then reduce heat and cover.
  5. Cook for about 20 minutes or until rice is tender.
  6. Stir in the cream cheese and Parmesan cheese until melted and well combined.
  7. Season with salt and pepper, and serve hot.

Notes
