Ingredients
- 1 pound chicken breast, cubed
- 1 cup uncooked rice
- 2 cups chicken broth
- 1/2 cup light cream cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon Cajun seasoning
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion, bell pepper, and garlic; cook until softened.
- Stir in the cubed chicken and Cajun seasoning; cook until the chicken is browned.
- Add rice and chicken broth, bring to a boil, then reduce heat and cover.
- Cook for about 20 minutes or until rice is tender.
- Stir in the cream cheese and Parmesan cheese until melted and well combined.
- Season with salt and pepper, and serve hot.
Notes
