Description

Crispy air-fried zucchini fries made with whole wheat or gluten-free breadcrumbs and a seasoned coating. Flexible for dairy-free and vegan adaptations, these make a wholesome and satisfying snack or side.


Ingredients

  • 2 medium zucchinis, cut into 3” x ½” sticks
  • ½ cup whole wheat breadcrumbs (or gluten-free)
  • ¼ cup grated Parmesan cheese (or nutritional yeast for dairy-free)
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • Salt and black pepper to taste
  • 2 eggs (or flax eggs for vegan version)
  • Olive oil spray (optional)


Instructions

  1. Prep the Zucchini: Salt zucchini sticks lightly and let sit for 10 minutes to draw out moisture. Pat dry thoroughly with a clean towel or paper towels.
  2. Prepare Breading Station: Set up three shallow bowls: (1) optional flour, (2) beaten eggs or flax egg, (3) breadcrumb mixture made from breadcrumbs, Parmesan (or nutritional yeast), garlic powder, paprika, salt, and pepper.
  3. Bread the Zucchini: Dredge each stick in optional flour, dip in egg or flax egg, and roll in the breadcrumb mixture until well coated.
  4. Air Fry: Preheat air fryer to 400°F (200°C) for 3–5 minutes. Arrange fries in a single layer in the air fryer basket and spray lightly with olive oil if using.
  5. Cook: Air fry for 8–10 minutes, shaking or turning at the 5-minute mark, until golden and crisp.
  6. Serve: Let rest for 2 minutes before serving. Best enjoyed warm with your choice of dipping sauce.

Notes

To make fully vegan, use flax eggs and nutritional yeast. For crispier results, avoid overcrowding the air fryer basket and use a light spray of oil.
