Ingredients
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 pounds boneless chicken thighs
- 1 tablespoon olive oil
- 1/4 cup chicken broth
- Juice of 1 lemon
Instructions
- In a bowl, combine all spices: cumin, coriander, paprika, turmeric, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Rub the spice mixture all over the chicken thighs. For best flavor, marinate in the fridge overnight.
- Place the coated chicken in the slow cooker in an even layer.
- Add olive oil, chicken broth, and lemon juice to the slow cooker.
- Cover and cook on low for 6 to 8 hours. Once cooked, shred the chicken with two forks before serving.
