Description

A delightful twist on a classic Italian carbonara, featuring the chewy texture of halloumi paired with a rich, creamy sauce.


Ingredients

  • 200g spaghetti
  • 150g halloumi cheese, diced
  • 2 eggs
  • 100ml heavy cream
  • 50g grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Cook the spaghetti according to package instructions until al dente.
  2. In a pan, fry the diced halloumi until golden brown, about 3-4 minutes.
  3. In a bowl, whisk together the eggs, heavy cream, and grated Parmesan.
  4. Drain the cooked spaghetti, reserving some pasta water, and add it to the pan with halloumi.
  5. Pour the egg mixture over the spaghetti, stirring quickly to cook the eggs gently.
  6. Season with garlic, salt, and pepper to taste.
  7. Serve immediately, garnished with parsley.

Notes

Store leftovers in an airtight container for 3-4 days. Reheat gently with a splash of water or cream.
