A delightful twist on a classic Italian carbonara, featuring the chewy texture of halloumi paired with a rich, creamy sauce.
Ingredients
- 200g spaghetti
- 150g halloumi cheese, diced
- 2 eggs
- 100ml heavy cream
- 50g grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the spaghetti according to package instructions until al dente.
- In a pan, fry the diced halloumi until golden brown, about 3-4 minutes.
- In a bowl, whisk together the eggs, heavy cream, and grated Parmesan.
- Drain the cooked spaghetti, reserving some pasta water, and add it to the pan with halloumi.
- Pour the egg mixture over the spaghetti, stirring quickly to cook the eggs gently.
- Season with garlic, salt, and pepper to taste.
- Serve immediately, garnished with parsley.
Notes
Store leftovers in an airtight container for 3-4 days. Reheat gently with a splash of water or cream.
