Description
A comforting Japanese soup combining vegetable gyozas, fresh vegetables, and flavorful broth for a cozy meal.
Ingredients
- 5 vegetable gyozas
- 2 spring onions, thinly sliced
- ½ – 1 bulb pack choi, sliced into chunks
- 20 g ginger, finely grated
- 1 clove garlic, minced
- ½ courgette, spiralised
- 500 ml vegetable stock
- 1 tbsp soy sauce
- 1 tbsp chilli oil
- Salt & pepper to taste
Instructions
- Add chilli oil into a medium-sized saucepan on low heat.
- Add half of the thinly sliced spring onion and season with salt. Fry for a couple of minutes.
- Add garlic and ginger, and fry for a minute.
- Add all other ingredients: gyozas, pak choi, courgette, stock, and soy sauce.
- Stir to combine and cover with a lid. Simmer for around 7 minutes.
- Serve with a sprinkle of spring onion and chilli flakes.
Notes
Use fresh vegetables for best flavor. Adjust spice level by varying chilli oil. Customize with other vegetables or proteins like tofu.
