Description
A hearty and healthy dish combining ground turkey and potatoes, perfect for a weeknight dinner.
Ingredients
- 1 lb ground turkey
 - 2 medium potatoes, diced
 - 1 onion, chopped
 - 1 bell pepper, chopped
 - 3 cloves garlic, minced
 - 2 tbsp olive oil
 - 1 tsp smoked paprika
 - 1 tsp dried thyme
 - Salt and pepper to taste
 - Red chili flakes (optional)
 - Fresh parsley for garnish
 
Instructions
- Heat a large skillet over medium heat and add olive oil.
 - Add diced potatoes and cook for 8-10 minutes, stirring occasionally, until golden brown and tender.
 - Remove potatoes from the skillet and set aside.
 - In the same skillet, add remaining olive oil and sauté chopped onion and bell pepper for 3-4 minutes until softened.
 - Add minced garlic and cook for an additional minute.
 - Add ground turkey and break it apart as it cooks for 6-8 minutes until browned and cooked through.
 - Sprinkle in smoked paprika, dried thyme, salt, pepper, and red chili flakes, stirring to coat the mixture.
 - Return cooked potatoes to the skillet and mix gently, allowing flavors to meld for 2-3 minutes.
 - Turn off heat and garnish with fresh parsley. Serve hot.
 
Notes
Cut potatoes into even sizes for even cooking. Adjust spices to taste and feel free to add other vegetables like zucchini or carrots.
