Description

A quick and healthy stir fry featuring lean ground turkey, vibrant vegetables, and a homemade teriyaki sauce.


Ingredients

  • 450 g lean ground turkey
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 medium bell peppers, thinly sliced
  • 2 cups broccoli florets
  • 1 cup carrots, thinly sliced
  • 1/2 cup green onions, sliced (for garnish)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water


Instructions

  1. Make the teriyaki sauce: In a bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch mixed with 2 tablespoons of water. Set this mixture aside.
  2. Heat the olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook for 5–7 minutes, breaking it apart, until it is browned and cooked through.
  3. Stir in the minced garlic and grated ginger; cook for another 1–2 minutes until fragrant.
  4. Add the thinly sliced bell peppers, broccoli florets, and sliced carrots; cook for 5–7 minutes until the vegetables are tender but still crisp.
  5. Pour the teriyaki sauce into the skillet; stir everything to coat well. Let it simmer for 2–3 minutes until the sauce thickens.
  6. Finish by garnishing with sliced green onions and serve hot over rice, quinoa, or noodles.

Notes

For extra flavor, try adding sesame oil while cooking the turkey. Mix in other vegetables like snap peas or zucchini for variety.
