A delicious and healthy casserole combining ground turkey and sweet potatoes, perfect for family dinners or meal prep.
Ingredients
- 1 lb (450 g) ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup spinach, fresh or frozen, thawed
- 1 cup low-sodium chicken broth
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp chili powder
- Salt and pepper, to taste
- 1/2 cup shredded cheese (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant.
- Add ground turkey and cook until browned, about 5-7 minutes. Season with smoked paprika, cumin, chili powder, salt, and pepper.
- Stir in the red bell pepper and spinach. Cook for another 2-3 minutes.
- In a separate pot, boil diced sweet potatoes until tender (about 10 minutes). Drain well.
- In a baking dish, layer the cooked sweet potatoes and the turkey mixture. Pour chicken broth over the top.
- Top with shredded cheese if using, and bake for 15-20 minutes until hot and bubbly.
- Let it cool slightly before serving. Enjoy!
Notes
To store leftovers, let the casserole cool completely, then cover it. It can be kept in the refrigerator for up to 3 days. For freezing, cover tightly and store for up to 3 months.
