Description

A delicious and healthy meal combining lean ground turkey, sweet potatoes, and fresh veggies, perfect for busy weeknights.


Ingredients

  • 1 lb ground turkey
  • 2 large sweet potatoes, diced
  • 1 medium zucchini, diced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • Salt and pepper to taste
  • Optional: spices like paprika, cumin, or Italian seasoning


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic and sauté until soft.
  3. Add ground turkey and cook until browned, seasoning with salt, pepper, and optional spices.
  4. In a large baking dish, combine diced sweet potatoes, zucchini, and the cooked turkey mixture.
  5. Mix well and top with shredded cheese.
  6. Cover with foil and bake for 25-30 minutes.
  7. Remove foil and bake for an additional 10 minutes, or until cheese is bubbling and sweet potatoes are tender.
  8. Allow to cool slightly before serving.

Notes

You can add more veggies or different cheeses for a unique flavor. Store leftovers in an airtight container for up to 4 days or freeze for longer storage.
