Ingredients
- 1 lb ground turkey
- 2 large sweet potatoes, diced
- 1 medium zucchini, diced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp olive oil
- Salt and pepper to taste
- Optional: spices like paprika, cumin, or Italian seasoning
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic and sauté until soft.
- Add ground turkey and cook until browned, seasoning with salt, pepper, and optional spices.
- In a large baking dish, combine diced sweet potatoes, zucchini, and the cooked turkey mixture.
- Mix well and top with shredded cheese.
- Cover with foil and bake for 25-30 minutes.
- Remove foil and bake for an additional 10 minutes, or until cheese is bubbling and sweet potatoes are tender.
- Allow to cool slightly before serving.
Notes
You can add more veggies or different cheeses for a unique flavor. Store leftovers in an airtight container for up to 4 days or freeze for longer storage.
