A healthy twist on classic enchiladas, using ground turkey and black beans for a flavorful and nutritious meal.
Ingredients
- 1 lb ground turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup enchilada sauce
- 8 small tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the chopped onion and minced garlic over medium heat until softened.
- Add the ground turkey, chili powder, cumin, salt, and pepper. Cook until the turkey is browned.
- Stir in the black beans and half of the enchilada sauce.
- Divide the turkey mixture among the tortillas, roll them up, and place them seam side down in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with cheese.
- Bake for 20-25 minutes, until the cheese is melted and bubbly.
- Garnish with fresh cilantro if desired and serve warm.
Notes
These enchiladas can be made ahead of time and stored. They pair well with salads or avocado.
