Description

A healthy twist on classic enchiladas, using ground turkey and black beans for a flavorful and nutritious meal.


Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup enchilada sauce
  • 8 small tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the chopped onion and minced garlic over medium heat until softened.
  3. Add the ground turkey, chili powder, cumin, salt, and pepper. Cook until the turkey is browned.
  4. Stir in the black beans and half of the enchilada sauce.
  5. Divide the turkey mixture among the tortillas, roll them up, and place them seam side down in a baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  7. Bake for 20-25 minutes, until the cheese is melted and bubbly.
  8. Garnish with fresh cilantro if desired and serve warm.

Notes

These enchiladas can be made ahead of time and stored. They pair well with salads or avocado.
