Ingredients
- 1 pound ground turkey
- 2 medium zucchinis
- 1 tablespoon olive oil
- 1/2 medium onion
- 2 cloves garlic
- 1 teaspoon dried oregano
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Sauté the chopped onion until soft, about 3-4 minutes.
- Add minced garlic and cook until fragrant, about 30 seconds.
- Crumble in the ground turkey and cook until browned, about 6-8 minutes.
- Slice zucchini into half-moons and add to the skillet.
- Stir and cook until zucchini starts to soften, about 4-5 minutes.
- Season with oregano, salt, black pepper, and crushed red pepper flakes; pour in chicken broth.
- Let it simmer on low for 3-4 minutes.
- Sprinkle grated Parmesan over the top and stir until melted.
- Adjust seasoning and serve immediately.
Notes
For more flavor, add other vegetables like bell peppers or spinach. Adjust spice level by adding more crushed red pepper flakes.
