Description

Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the chopped onion until soft, about 3-4 minutes.
  3. Add minced garlic and cook until fragrant, about 30 seconds.
  4. Crumble in the ground turkey and cook until browned, about 6-8 minutes.
  5. Slice zucchini into half-moons and add to the skillet.
  6. Stir and cook until zucchini starts to soften, about 4-5 minutes.
  7. Season with oregano, salt, black pepper, and crushed red pepper flakes; pour in chicken broth.
  8. Let it simmer on low for 3-4 minutes.
  9. Sprinkle grated Parmesan over the top and stir until melted.
  10. Adjust seasoning and serve immediately.

Notes

For more flavor, add other vegetables like bell peppers or spinach. Adjust spice level by adding more crushed red pepper flakes.
