  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup corn, drained
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 2 cups cooked rice
  • Salt and pepper to taste


Instructions

  1. In a large skillet, brown the ground beef over medium heat.
  2. Add onion, bell pepper, and garlic. Cook until vegetables are soft.
  3. Stir in taco seasoning, corn, black beans, and diced tomatoes.
  4. Simmer for 5 minutes until heated through.
  5. Add cooked rice and mix well.
