Description
A creamy and flavorful spinach dip made with Greek yogurt, perfect for gatherings and parties.
Ingredients
- 2 tbsp olive oil
- 1 small sweet onion, diced
- 4-5 garlic cloves, minced
- 16 oz fresh spinach, chopped
- 1/2 cup plain Greek yogurt
- 1/4 cup reduced fat mayonnaise
- 1 cup parmesan, grated or shredded
- 1 cup mozzarella, shredded
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Finely chop the fresh spinach, dice the onion, and mince the garlic. Grate the parmesan cheese and set it aside for later.
- Heat the olive oil in a large skillet over medium heat. Add the diced onions and sauté for 3-5 minutes or until they become translucent.
- Stir in the minced garlic and chopped spinach, cooking for an additional 3-5 minutes or until the spinach wilts down.
- While the spinach mixture cooks, combine the Greek yogurt, reduced fat mayonnaise, 1/4 cup of parmesan, 1/2 cup of mozzarella, salt, pepper, and optional red pepper flakes in a separate bowl.
- Add the Greek yogurt mixture to the pan with the spinach. Stir everything together and cook for an additional 1-2 minutes.
- Transfer the mixture to an oven-safe baking dish that you can serve from later. Top with the remaining 1/2 cup of parmesan and 1/2 cup of mozzarella, adjusting to your preference.
- Place the dish in the preheated oven for 15-20 minutes. Broil for 2-3 minutes at the end to create a bubbly, golden-brown top.
Notes
For extra creaminess, you can add more Greek yogurt or mayonnaise to taste.
