Description
A healthy and delicious meal of lean turkey meatballs served with a refreshing tzatziki sauce.
Ingredients
- 1 pound lean ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1 clove garlic, minced
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon oregano
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, mint, garlic, egg, salt, pepper, and oregano. Mix well.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake for 20-25 minutes until cooked through.
- Meanwhile, prepare the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, and pepper in a bowl.
- Serve the meatballs with tzatziki sauce on the side.
Notes
Make sure to drain the grated cucumber well to avoid a watery tzatziki. You can customize with feta cheese or sun-dried tomatoes.
