A healthy and delicious meal of lean turkey meatballs served with a refreshing tzatziki sauce.


Ingredients

  • 1 pound lean ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1 clove garlic, minced
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon oregano
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, mint, garlic, egg, salt, pepper, and oregano. Mix well.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes until cooked through.
  5. Meanwhile, prepare the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, and pepper in a bowl.
  6. Serve the meatballs with tzatziki sauce on the side.

Notes

Make sure to drain the grated cucumber well to avoid a watery tzatziki. You can customize with feta cheese or sun-dried tomatoes.
