Description

A refreshing and easy-to-make Greek Potato Salad loaded with fresh veggies and Mediterranean flavors, perfect as a side dish.


Ingredients

  • 2 pounds potatoes
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Boil the potatoes in a big pot of water until they’re tender, about 15-20 minutes.
  2. Drain the potatoes and let them cool.
  3. Once cooled, cut the potatoes into cubes.
  4. In a big bowl, combine the potatoes, cherry tomatoes, cucumber, onion, olives, and feta.
  5. In a separate bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  6. Pour the dressing over the salad and toss gently.
  7. Chill in the fridge for at least 30 minutes before serving.

Notes

Avoid overcooking the potatoes and ensure they cool before mixing to prevent sogginess.
