A refreshing Mediterranean dish combining orzo pasta and vibrant vegetables, perfect for any occasion.
Ingredients
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook orzo pasta according to package instructions, then drain and let cool.
- In a large bowl, combine cooled orzo, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or refrigerate for up to 2 hours before serving.
Notes
For a variation, add grilled chicken or shrimp for extra protein. Store in an airtight container for up to two days.
