A delightful and simple Greek Lemon Rice dish packed with flavor, perfect as a side or for any occasion.
Ingredients
- 1 cup long-grain rice
- 2 cups vegetable or chicken broth
- 1 medium lemon (juice and zest)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1/4 cup fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the rice and stir to coat it in the oil, cooking for another 2 minutes.
- Pour in the broth, lemon juice, and zest. Bring to a boil, then reduce heat to low and cover.
- Cook for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and fluff the rice with a fork. Stir in the chopped parsley and season with salt and pepper to taste. Serve warm.
Notes
Make sure to rinse the rice to avoid a gummy texture. Taste test before serving to adjust seasoning.
