A delicious and hearty Mediterranean dish featuring green beans, potatoes, and tomatoes, perfect for a healthy meal.
Ingredients
- 500g green beans, trimmed
- 2 medium potatoes, peeled and diced
- 2 medium tomatoes, chopped
- 1 large onion, chopped
- 4 tablespoons extra virgin olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh herbs (parsley or dill) for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the diced potatoes and cook for another 5 minutes.
- Add the green beans and chopped tomatoes, along with the oregano, salt, and pepper.
- Pour in enough water to cover the vegetables and bring to a simmer.
- Cover and let it cook for 30-35 minutes or until the beans and potatoes are tender.
- Adjust seasoning as needed and serve warm, garnished with fresh herbs.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave.
