Description

A delicious and hearty Mediterranean dish featuring green beans, potatoes, and tomatoes, perfect for a healthy meal.


Ingredients

  • 500g green beans, trimmed
  • 2 medium potatoes, peeled and diced
  • 2 medium tomatoes, chopped
  • 1 large onion, chopped
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs (parsley or dill) for garnish


Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the diced potatoes and cook for another 5 minutes.
  4. Add the green beans and chopped tomatoes, along with the oregano, salt, and pepper.
  5. Pour in enough water to cover the vegetables and bring to a simmer.
  6. Cover and let it cook for 30-35 minutes or until the beans and potatoes are tender.
  7. Adjust seasoning as needed and serve warm, garnished with fresh herbs.

Notes
