Description

Tender chunks of marinated chicken skewers infused with vibrant flavors and a delightful smokiness, perfect for summer barbecues.


Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound chicken breast, cut into cubes


Instructions

  1. In a medium-sized mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Whisk until well blended.
  2. Add chicken cubes to the marinade and ensure each piece is coated. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat your grill to medium-high heat.
  4. Thread marinated chicken onto skewers.
  5. Grill skewers for 10-15 minutes, turning occasionally, until chicken is golden-brown and cooked through.
  6. Remove from grill and let rest for a few minutes before serving.

Notes

For a wonderful wrap, serve in warm pita bread with tzatziki sauce, fresh cucumber, and tomatoes. You can also serve over rice or with grilled vegetables.
